Pork & Guajillo Sauce

A traditional staple in good ol' Mexico, the shredded pork with guajillio sauce is a nationwide known tamale even in the United States. We slow boil our pork tenderloin in a blend of salt, pepper, garlic, and onion for several hours until the pork tenderloin starts to fall apart all by itself. The guajillo peppers are boiled in a similar blend of seasoning and then blended with a mixture of Chef private seasoning and ingredients box that brings notes front and center.

Chicken & Tomatillo Sauce

This is another staple in good ol' Mexico, the shredded chicken breast with tomatillo sauce is a tamale that can be found in homes and neighborhoods across the United States. We slow boil our chicken breasts with a blend of salt, pepper, onion for several hours until the chicken breasts begin to break apart with a simple swirl of the pot. The tomatillo sauce is blend of boiled jalapeño, garlic, onion, salt, pepper, and a few hints from Chef's Private Box.

Poblano & Cheese

Fresh and aromatic poblanos make their way to the roaster to be slowly tumbled into a roasted perfection. They're allowed to steam until the outer membrane begins to naturally pull away from the meat of the poblano. Peeled and steamed, the poblano is shredded into tamale sized pieces, blended with monterey jack and cheddar cheese and seasoned with touches from Chef's Private Box.

Refried Bean & Guajillo Sauce

Our beans are slow boiled in garlic, onion, salt, and pepper. Soon after, they're tossed into a hot frying pan with some oil. They're mashed with precision to crush what needs to be crushed and leave some beans whole. Guajillo peppers are slow boiled into a sauce with salt, garlic, onion, and pepper. The refried beans and the guajillo sauce are mixed to create a new product to crave.

The Bison Mango Habanero

Bison goes into the pot with salt, pepper, garlic, onion, bayleaves, and hints of love from Chef's Private Box. It's slowly cooked until it begins to fall apart by itself. Habaneros are lightly roasted to bring out more terpene flavor. The mango and roasted habaneros are blended with salt, water, and garlic. Shredded bison and mango habanero sauce are combined and refined into a magical and tasty tamale filling.

The Anaheim

Flavor above all else. The Anaheim is slow roasted similar to poblanos. The anaheims are allowed to steam until the outer membrane separates from the meat of the pepper. The skin is peeled off and then we're left with something tasty and edible. We're going to mix this tasty pepper meat with some freshly grated Monterey Jack and call it a day.

The Hatch

Known as the New Mexican Pepper, the Hatch Pepper is grown in the Hatch Valley. Grown at 4,000 ft. high elevation, hot days, and cold nights make the perfect conditions for pulling out the flavor of this particular pepper. We keep it simple and do our best to not take away from the rich flavor of the Hatch pepper. Slowly roasted, skin peeled off, mixed with Monterey Jack, this Hatch Pepper Tamale is that next level taste.

Slow boiled turkey tenderloins in a blend of salt, garlic, onion, and pepper until the meat falls apart by itself. You know how we like to do it here at TML. It cooks slowly until the meat begins to separate from itself. That's when you know it's ready to go to the next step. The Jallapeno

Cheese and jalapeños are the foundation for this mouth watering and aromatic room filling concoction. The jalapeños are slow roasted to bring out that cooked jalapeño terpenes along with a sense of that smoky charr flavor. A block of softened cream cheese is seasoned with salt, pepper, and hints from Chef's Private Box, bits of bacon, and cheddar cheese. The cheese and jalapeño make their way onto masa wrapped in a husk. Wave you wand twice and presto!

The Serranno

The serrano pepper packs more heat than a jalapeno. That's why we have this tamal. If you're not looking to get Thai'd up or Ghosted, this tamale is a good choice when you don't want that mild jalapeno. It's slowly roasted to bring out the cooked terpene aroma, and it's mixed with a blend of tasty whole milk mozzarella cheese.

The BBQ Brisket

Slowly smoked in mesquite at a heat of 300°F until the internal temperature reaches 165°F, this beef brisket practically melts in your mouth and leave a lifetime impression. The Sweet Potato

Sweet Sweet potato. We dice our beautifully shaped potatoes into small bite sized cubes that get seasoned with magical touches from Chef's Private Box. We do know the sweet potatoes are drenched in oil, seasoned with salt and pepper and tossed into the oven to soften. The diced sweet potatoes are tossed into a tamale and smothered in butter, rosemary, and garlic sauce to bring them to completion.

The Black Bean

The black bean tamale comes with whole black beans, chopped serrano, onion, garlic, and finely chopped cilantro. It's basically a black bean salad but better because it's inside of a tamale. The beans are soaked over night to remove any bad beans that may burst or pop and will not come out whole when properly slow boiled, and it's seasoned with treats from Chef's Private Box. These beans comes out fresh, soft, steamy, and ready for any hungry belly.

The Asparago

The Asparago is our asparagus and pepper jack cheese tamale. It's a filling sauce made of asparagus and seasoning from Chef's Private Box. The asparagus itself is steamed until tender and then seasoned lightly with salt and then covered with pepper jack cheese before being covered in masa and turned into a special tamale that'll have you wondering why you've never had it before.

The Strawberry & Jam

The Hazelnut & Strawberry

The Mole With Pork

Our mole sauce is veggie broth, guajillo peppers, ancho peppers, chipotle peppers, dinner rolls, corn tortillas, pumpkin seeds, corn kernels, tomatoes, tomatillos, onion, garlic, peanuts, salt, pepper, and touches from Chef's Private Box. It can be a laborious process to get the mole just right. We slow boil all sorts of boneless pork meats in a bone broth until the is tender that it starts to fall apart. That's our pork mole filling.

The Birria

Birria is a traditional dish from the Mexican State of Jalisco. The dish is made with lamb regularly, but we use beef here as a more accessible option. Made with chuck or round and slow boiled in ancho peppers, guajillo peppers, roasted tomatoes, cloves, garlic, oregano, onion, vinegar, salt, pepper, and touches from Chef's Private Box. The left over broth is reduced into a sauce and placed into tamales with the shredded birria. It's a tamale like you've never had before.

The Cracklin

A team personal favorite, it is made from fried pork rinds and smothered in either guajillo or tomatillo sauce. A healthy and low carb snack, the pork rind chicharron is stripped from all fat, boiled, and allowed to dry. When it finally reaches that critical drying point, it's time to fry. Everyone likes how pop corn pops, but everyone loves how the pork rinds crackle. Crackle pieces and mouth quivering sauces covered in masa and allowed to steam.

The Bacon & Brussels

Slow baked crunchy thick cut bacon with roasted brussel sprouts smothered in honey mustard sauce. These brussel sprouts and thick cut bacon are cut down to small bite size pieces that fit nicely inside a tamale. The honey mustard sauce is drizzled on top while the meats rest on the masa. We do our best that all the thick and tasty sauce stays inside the tamale as we wrap it into its corn husk.

The Squashinator

The Cuban & Chorizo

It's a fusion of African, Caribbean, and Spanish cuisine made in the island of Cuba. Passed onto us by friends, it's a flavorful piece with boneless country-style pork ribs and chorizo stuffing sprinkled with notes from Chef's Private Box. Infused with red wine, the pork cooks slowly in a saucepan mixture of onion, garlic, beef bouillon, salt, and pepper to the point where the meat is falling apart. Bring the chorizo into the mixture, reduce, and you presto. Time to tamale.

The Cuban & Corn

Passed onto us by friends, it's a flavorful piece with boneless country-style pork ribs stuffing sprinkled with notes from Chef's Private Box. The masa is made with fresh sweet corn processed into a paste. The pork is slowly simmered in a pot full of rich bone broth with onion, bayleaves, garlic, salt, and pepper. When tender, the pork is shredded to a fine ground meat. It's combined with the sweet corn paste and wrapped in a corn husk and steamed to perfection.

The Black Bean & Sweet Potato

Slow boiled black beans soaked in garlic and cilantro to give you a fresh and tasty flavor and aroma mixed with diced sweet potatoes slowly cooked until tender. This mixture comes embedded with Chef's Private Box. Sweet potatoes are diced down to the size of a bean to make sure that every bite you take has design in its consistency.
